Instructions
- Grate the zucchini and squeeze out excess moisture using a clean towel.
- In a bowl, combine the grated zucchini, salt, pepper, beaten eggs, crumbled cheese, minced garlic, chopped scallions, chopped parsley, and almond flour until well mixed.
- Heat oil in a skillet over medium heat.
- Scoop spoonfuls of the mixture into the skillet and flatten slightly to form patties.
- Cook for about 3-4 minutes on each side until golden brown and crispy.
- Remove from skillet and place on paper towels to drain excess oil. Serve warm.
