4 boneless
skinless chicken breasts (about 6 ounces each)
2 tablespoons olive oil

1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup panko breadcrumbs
1/3 cup grated Parmesan cheese
1/3 cup shredded mozzarella cheese
2 tablespoons unsalted butter
melted
1 tablespoon mayonnaise
1 teaspoon dried parsley
1/2 teaspoon garlic powder
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix together olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper. Coat the chicken breasts evenly in this mixture.
- In another bowl, combine panko breadcrumbs, Parmesan cheese, mozzarella cheese, melted butter, mayonnaise, dried parsley, and garlic powder.
- Place the chicken breasts on a baking sheet and top with the Parmesan mixture, pressing it gently to adhere.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the crust is golden brown.
