  • ¼ cup (56g) packed light brown sugar
  • 7 tbsp (98g) unsalted butter melted
  • 24 oz (678g) cream cheese room temperature
  • 3/4 cup (168g) packed light brown sugar
  • 3 tbsp (24g) all-purpose flour
  • 1 tsp vanilla extract
  • 1/2 cup (112g) sour cream
  • 1/2 cup (120ml) heavy whipping cream
  • 1 cup (169g) butterscotch chips
  • 3.4 oz package dry Butterscotch pudding mix
  • 4 large eggs room temperature

Instructions

  1. Preheat the oven to 325°F (163°C). Grease a 9-inch springform pan.
  2. In a medium bowl, mix graham cracker crumbs, brown sugar, and melted butter until combined. Press the mixture firmly into the bottom of the prepared pan to form the crust.
  3. In a large mixing bowl, beat the cream cheese and brown sugar together until smooth. Add flour, vanilla extract, sour cream, and heavy whipping cream, mixing until combined.
  4. Stir in butterscotch chips and dry butterscotch pudding mix, then add the eggs one at a time, mixing well after each addition.
  5. Pour the filling into the crust and smooth the top. Bake for 30-35 minutes or until the center is set but still slightly jiggly.
  6. Remove from the oven and let cool in the pan for 10 minutes, then run a knife around the edge to loosen. Chill in the refrigerator for at least 4 hours or overnight before serving.
