- 1 3/4 cups (235g) graham cracker crumbs
- ¼ cup (56g) packed light brown sugar
- 7 tbsp (98g) unsalted butter melted
- 24 oz (678g) cream cheese room temperature
- 3/4 cup (168g) packed light brown sugar
- 3 tbsp (24g) all-purpose flour
- 1 tsp vanilla extract
- 1/2 cup (112g) sour cream
- 1/2 cup (120ml) heavy whipping cream
- 1 cup (169g) butterscotch chips
- 3.4 oz package dry Butterscotch pudding mix
- 4 large eggs room temperature
Instructions
- Preheat the oven to 325°F (163°C). Grease a 9-inch springform pan.
- In a medium bowl, mix graham cracker crumbs, brown sugar, and melted butter until combined. Press the mixture firmly into the bottom of the prepared pan to form the crust.
- In a large mixing bowl, beat the cream cheese and brown sugar together until smooth. Add flour, vanilla extract, sour cream, and heavy whipping cream, mixing until combined.
- Stir in butterscotch chips and dry butterscotch pudding mix, then add the eggs one at a time, mixing well after each addition.
- Pour the filling into the crust and smooth the top. Bake for 30-35 minutes or until the center is set but still slightly jiggly.
- Remove from the oven and let cool in the pan for 10 minutes, then run a knife around the edge to loosen. Chill in the refrigerator for at least 4 hours or overnight before serving.
