¼ cup limoncello liqueur
8 oz mascarpone cheese
1 cup heavy cream
½ cup powdered sugar
1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a bowl, whisk together the flour and baking powder; set aside.
- In a separate large bowl, beat the egg yolks and granulated sugar until light and fluffy.
- Add the lemon zest, lemon juice, and limoncello to the egg mixture, mixing well.
- Gradually fold in the dry ingredients until just combined.
- In another bowl, beat the egg whites until stiff peaks form, then fold them into the batter gently.
- Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool completely in the pan before transferring it to a wire rack.
- For the mascarpone cream, beat together the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract until soft peaks form.
- Once the cake is cooled, frost it with the mascarpone cream and chill in the refrigerator before serving.
