1/3 cup Granulated sugar
3 tablespoons Lemon juice from the 3 lemons
1/2 tablespoon lemon zest
a pinch of salt
Instructions
- In a saucepan, combine the heavy cream and granulated sugar over medium heat, whisking until the sugar is dissolved and the mixture is just starting to simmer.
- Remove from heat and add the lemon juice, lemon zest, and a pinch of salt, stirring well to combine.
- Allow the mixture to cool slightly, then pour it into individual serving glasses or lemon halves.
- Chill in the refrigerator for at least 4 hours, or until set.
Notes
For best results, ensure the cream does not boil too vigorously. You can adjust the lemon juice to taste for a tangier posset.
