Ingredients

  • 1 ½ cups (about 175 g) graham cracker crumbs
  • 3 tablespoons (37 g) granulated sugar
  • 6 tablespoons (85 g) unsalted butter

  • 3 large egg yolks
  • ½ cup (120 ml) fresh lemon juice
  • 1 ½ to 2 teaspoons lemon zest

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease an 8-inch square baking dish.
  2. In a bowl, combine graham cracker crumbs, granulated sugar, melted butter, and a pinch of salt. Mix until well combined.
  3. Press the mixture firmly into the bottom of the prepared baking dish to form the crust.
  4. In another mixing bowl, whisk together the sweetened condensed milk, egg yolks, fresh lemon juice, lemon zest, and a pinch of salt until smooth.
  5. Pour the lemon filling over the prepared crust and spread it evenly.
  6. Bake for 25 to 30 minutes until the filling is set and lightly golden.
  7. Allow to cool at room temperature, then refrigerate for at least 2 hours before slicing into bars.
