Ingredients

1 pound chicken breast cubed
1/4 cup olive oil
Juice of 2 lemons
3 cloves garlic minced
1 tablespoon fresh rosemary chopped
1 tablespoon fresh thyme chopped
Salt and pepper to taste
Skewers (wooden or metal)
Instructions
- In a bowl, combine olive oil, lemon juice, minced garlic, rosemary, thyme, salt, and pepper.
- Add the cubed chicken to the marinade and toss to coat evenly. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
- Preheat your grill or oven to medium-high heat.
- Thread the marinated chicken onto skewers.
- Place the skewers on the grill or in the oven and cook for about 10-15 minutes per side, or until the chicken is cooked through and reaches an internal temperature of 165°F.
- Remove from heat and let rest for a few minutes before serving.
Notes
For added flavor, soak wooden skewers in water for 30 minutes before grilling to prevent burning.
