- 2 Large chicken breasts
- 1 Teaspoon salt
- 1 Teaspoon black pepper freshly cracked
- 1 Teaspoon italian seasoning
- ½ Cup panko breadcrumbs
- ½ Cup shredded parmesan cheese
- 3 Tablespoons flour
- ¼ Teaspoon garlic powder
- 4 oz unsalted butter
- 3 Cloves garlic minced
- ¼ Cup chicken stock
- ¼ Cup fresh lemon juice
- As Needed fresh parsley
- minced for garnish
- 2 Large eggs
- 1 Tablespoon water
Instructions
- Preheat your oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper.
- In a shallow bowl, whisk together the eggs and water. In another bowl, combine the panko breadcrumbs, parmesan cheese, salt, pepper, italian seasoning, flour, and garlic powder.
- Dip each chicken breast into the egg mixture, allowing excess to drip off, then coat with the breadcrumb mixture, pressing to adhere.
- Heat oil in a skillet over medium heat and sear the coated chicken breasts for about 2-3 minutes per side until golden brown.
- Transfer the seared chicken to the prepared baking sheet and bake in the preheated oven for 20-25 minutes or until the internal temperature reaches 165°F (75°C).
- Meanwhile, in the same skillet, melt the butter over medium heat and sauté the minced garlic until fragrant. Add chicken stock and lemon juice, simmering for a few minutes.
- Once chicken is done, drizzle the garlic butter sauce over the chicken, garnish with fresh parsley, and serve.
Notes
For an extra kick, add a dash of crushed red pepper flakes to the garlic butter sauce.
