Description

Lemon Chicken with Garlic Butter Sauce is a flavorful dish featuring tender chicken breasts coated in a crispy panko and parmesan crust, enhanced with a rich garlic butter sauce and a refreshing lemon zing.


Ingredients

  • 2 Large chicken breasts
  • 1 Teaspoon salt
  • 1 Teaspoon black pepper freshly cracked
  • 1 Teaspoon italian seasoning
  • ½ Cup panko breadcrumbs
  • ½ Cup shredded parmesan cheese
  • 3 Tablespoons flour
  • ¼ Teaspoon garlic powder
  • 4 oz unsalted butter
  • 3 Cloves garlic minced
  • ¼ Cup chicken stock
  • ¼ Cup fresh lemon juice
  • As Needed fresh parsley
  • minced for garnish
  • 2 Large eggs
  • 1 Tablespoon water

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper.
  2. In a shallow bowl, whisk together the eggs and water. In another bowl, combine the panko breadcrumbs, parmesan cheese, salt, pepper, italian seasoning, flour, and garlic powder.
  3. Dip each chicken breast into the egg mixture, allowing excess to drip off, then coat with the breadcrumb mixture, pressing to adhere.
  4. Heat oil in a skillet over medium heat and sear the coated chicken breasts for about 2-3 minutes per side until golden brown.
  5. Transfer the seared chicken to the prepared baking sheet and bake in the preheated oven for 20-25 minutes or until the internal temperature reaches 165°F (75°C).
  6. Meanwhile, in the same skillet, melt the butter over medium heat and sauté the minced garlic until fragrant. Add chicken stock and lemon juice, simmering for a few minutes.
  7. Once chicken is done, drizzle the garlic butter sauce over the chicken, garnish with fresh parsley, and serve.

Notes

For an extra kick, add a dash of crushed red pepper flakes to the garlic butter sauce.
