This Lemon Chicken Recipe features tender, parmesan-crusted chicken breasts drizzled with a zesty lemon butter sauce for a deliciously fresh and satisfying meal.
Ingredients
1 1/2 lb chicken breast
1 Tbsp olive oil
1 Tbsp parsley
1/2 lemon
2 large eggs
1 garlic clove
1/2 tsp Italian seasoning
1/2 tsp salt
1/4 tsp ground black pepper
1 cup Parmesan cheese
3 Tbsp all-purpose flour
8 Tbsp unsalted butter
2 garlic cloves
1/4 cup lemon juice
1/4 cup chicken broth
1/4 tsp ground black pepper
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together the eggs, minced garlic, Italian seasoning, salt, and black pepper to make the egg mixture.
- In another bowl, combine the grated Parmesan cheese and flour to make the breading mixture.
- Dredge each chicken breast in the egg mixture, allowing excess to drip off, then coat in the Parmesan breading mixture.
- In a large skillet, heat the olive oil over medium heat and sear the chicken breasts for about 3-4 minutes on each side until golden brown.
- Transfer the chicken to the baking sheet and finish cooking in the oven for about 15-20 minutes or until the internal temperature reaches 165°F (75°C).
- In the meantime, prepare the lemon butter sauce by melting the butter in a saucepan over medium heat. Add the minced garlic and cook until fragrant.
- Stir in the lemon juice, chicken broth, and black pepper, cooking for an additional 2 minutes.
- Once the chicken is done, drizzle the lemon butter sauce over the chicken breasts, garnish with parsley and lemon slices, then serve.
Notes
For a richer flavor, let the butter sauce simmer longer to meld the flavors. This dish pairs wonderfully with a light salad or steamed vegetables.
