Ingredients

  • 1 ¼ lbs. boneless skinless chicken breast
  • lemon pepper seasoning
  • 1 teaspoon EACH: dried oregano
  • basil
  • parsley
  • mustard powder
  • ½ teaspoon dried dill weed
  • ½ cup dry white wine
  • 2 tablespoons butter
  • 1 small yellow onion
  • diced
  • ¾ cup carrots
  • diced
  • 2 sticks celery
  • diced
  • 4 cloves garlic
  • 6 cups chicken broth
  • 1 teaspoon hot sauce
  • 1 teaspoon Worcestershire sauce
  • ½ cup heavy cream
  • 2 cups fresh spinach
  • ½ cup parmesan cheese
  • freshly grated
  • Juice of 1 lemon
  • (3-4 Tbsp.)
  • ¾ cup orzo
  • uncooked

Instructions

  1. In a large pot, heat olive oil over medium heat. Season the chicken breasts with lemon pepper seasoning and add them to the pot. Cook until browned and cooked through, about 6-7 minutes per side. Remove from pot and let rest before shredding.
  2. In the same pot, add butter and sauté the diced onions, carrots, and celery until softened, about 5 minutes. Add minced garlic and cook for an additional minute.
  3. Pour in the white wine and deglaze the pot by scraping up any browned bits from the bottom. Cook until the wine is reduced by half.
  4. Add chicken broth, hot sauce, Worcestershire sauce, and the shredded chicken back into the pot. Bring to a boil.
  5. Once boiling, stir in the orzo and cook according to package instructions, typically about 8-10 minutes.
  6. Reduce heat to low and stir in heavy cream, spinach, parmesan cheese, and lemon juice. Heat through for a few minutes before serving.

Notes

Feel free to adjust the seasoning to your taste. This soup can also be made with rotisserie chicken for a quicker option. Garnish with additional parmesan and fresh herbs if desired.
