- 2 tablespoons olive oil
- 1 ¼ lbs. boneless skinless chicken breast
- lemon pepper seasoning
- 1 teaspoon EACH: dried oregano
- basil
- parsley
- mustard powder
- ½ teaspoon dried dill weed
- ½ cup dry white wine
- 2 tablespoons butter
- 1 small yellow onion
- diced
- ¾ cup carrots
- diced
- 2 sticks celery
- diced
- 4 cloves garlic
- 6 cups chicken broth
- 1 teaspoon hot sauce
- 1 teaspoon Worcestershire sauce
- ½ cup heavy cream
- 2 cups fresh spinach
- ½ cup parmesan cheese
- freshly grated
- Juice of 1 lemon
- (3-4 Tbsp.)
- ¾ cup orzo
- uncooked
Instructions
- In a large pot, heat olive oil over medium heat. Season the chicken breasts with lemon pepper seasoning and add them to the pot. Cook until browned and cooked through, about 6-7 minutes per side. Remove from pot and let rest before shredding.
- In the same pot, add butter and sauté the diced onions, carrots, and celery until softened, about 5 minutes. Add minced garlic and cook for an additional minute.
- Pour in the white wine and deglaze the pot by scraping up any browned bits from the bottom. Cook until the wine is reduced by half.
- Add chicken broth, hot sauce, Worcestershire sauce, and the shredded chicken back into the pot. Bring to a boil.
- Once boiling, stir in the orzo and cook according to package instructions, typically about 8-10 minutes.
- Reduce heat to low and stir in heavy cream, spinach, parmesan cheese, and lemon juice. Heat through for a few minutes before serving.
Notes
Feel free to adjust the seasoning to your taste. This soup can also be made with rotisserie chicken for a quicker option. Garnish with additional parmesan and fresh herbs if desired.
