Description

This Lemon Chicken Gnocchi is a creamy, flavorful dish featuring tender chicken, pillowy gnocchi, and fresh spinach, all brought together with a zesty lemon sauce. Perfect for a quick weeknight meal that feels gourmet.


Ingredients

  • 2 large chicken breasts
  • 1/2 teaspoon garlic powder
  • 1 teaspoon lemon pepper seasoning
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 cloves garlic
  • minced
  • 1/2 cup chicken broth
  • 1 tablespoon lemon juice
  • 1 cup heavy/whipping cream
  • 1 pound uncooked potato gnocchi
  • 1/2 cup freshly grated parmesan cheese
  • 2 cups (packed) fresh baby spinach
  • Salt & pepper to taste

Instructions

  1. Season the chicken breasts with garlic powder and lemon pepper seasoning.
  2. In a large skillet, heat the olive oil and butter over medium heat.
  3. Add the seasoned chicken to the skillet and cook until golden and cooked through, about 6-7 minutes per side.
  4. Remove the chicken from the skillet and let it rest for a few minutes before slicing it.
  5. In the same skillet, add minced garlic and sauté for about 1 minute.
  6. Pour in the chicken broth and lemon juice, scraping up any browned bits from the bottom of the skillet.
  7. Stir in the heavy cream and bring to a simmer, allowing it to thicken slightly.
  8. Add the potato gnocchi and cook according to package instructions until they float to the top.
  9. Stir in the parmesan cheese and fresh spinach, allowing the spinach to wilt.
  10. Slice the chicken and serve it on top of the gnocchi with extra sauce drizzled over.

Notes

For added flavor, marinate the chicken in lemon juice and garlic for a few hours before cooking. This dish can be served with a side salad for a complete meal.
