Description

This Lemon Blueberry Sheet Cake is a delightful dessert combining the tartness of lemon with the sweetness of fresh blueberries, perfect for any occasion.


Ingredients

3 cups all-purpose flour

2 teaspoons baking powder

1/2 teaspoon baking soda

1 1/4 teaspoon salt

1 cup butter (2 sticks)

softened

1 1/2 cups granulated sugar

Juice and zest of 2 lemons (about 1/4 cup lemon juice)

4 large eggs

1 cup buttermilk

2 teaspoons vanilla extract

1 1/2 cups fresh blueberries

tossed with 1 Tbs flour

2 1/2 cups powdered sugar

1/3 cup lemon juice


Instructions

  • Preheat your oven to 350°F (175°C) and grease a sheet cake pan.
  • In a bowl, whisk together the flour, baking powder, baking soda, and salt.
  • In a separate large bowl, cream the softened butter and sugar until light and fluffy.
  • Add the lemon juice, lemon zest, and eggs one at a time, mixing well after each addition.
  • Mix in the buttermilk and vanilla extract until combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Gently fold in the blueberries that have been tossed with 1 tablespoon of flour.
  • Pour the batter into the prepared sheet cake pan and smooth the top.
  • Bake for 30 minutes or until a toothpick inserted into the center comes out clean.
  • While the cake is baking, prepare the glaze by whisking together the powdered sugar and lemon juice until smooth.
  • Once the cake is baked and cooled, drizzle the lemon glaze over the top.

Notes

Ensure the blueberries are dry before tossing them in flour to prevent sinking in the batter. This cake can be stored at room temperature for a couple of days, or refrigerated for longer freshness.
