Ingredients

6 oz (170 g) cream cheese

3 tbsp (38 g) granulated white sugar

1/2 tsp vanilla

12 oz (340 g) fresh blueberries

1/4 cup (50 g) granulated white sugar

2 3/4 cups (344 g) all purpose flour

spooned and leveled

1/2 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 cup (200 g) granulated white sugar

2 tbsp (20 g) lemon zest

1 cup (227 g) unsalted butter

very softened

1 egg

at room temperature

2 tsp vanilla

1/4 cup (50 g) granulated white sugar

Instructions

  • In a medium bowl, beat together the cold cream cheese, 3 tbsp granulated sugar, and vanilla until smooth and creamy. Set aside.
  • In a saucepan over medium heat, combine fresh blueberries and 1/4 cup sugar. Cook until the blueberries have burst and mixture thickens, about 10 minutes. Remove from heat and let cool.
  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  • In another large bowl, cream the softened butter and 1 cup granulated sugar until light and fluffy. Add the egg, lemon zest, and 2 tsp vanilla, mixing well.
  • Gradually mix in the dry ingredients until combined.
  • Scoop dough onto the prepared baking sheet, making a small indentation in the center of each cookie to fill with cheesecake mixture and blueberry jam.
  • Fill each indentation with a small spoonful of cheesecake filling and a little blueberry jam.
  • Roll each cookie dough ball in the remaining granulated sugar and place them back on the baking sheet.
  • Bake for 12-15 minutes, until lightly golden. Let cool before serving.

Notes

For best results, chill the cookies before baking. Adjust the sweetness of the blueberry jam to taste.
