Description
These Lasagna Zucchini Boats are a delicious low-carb twist on traditional lasagna, filled with seasoned meat, ricotta, and topped with gooey mozzarella.

- 4 large zucchini (about 6 oz. each)
- cut in half vertically
- from top to bottom
- ½ pound lean ground beef or turkey
- ½ cup diced onion (about 1 medium yellow onion)
- ¼ teaspoon kosher salt
- ⅛ teaspoon coarse ground black pepper
- 2 cloves garlic
- minced
- 1 cup marinara or spaghetti sauce
- 1 cup ricotta cheese
- 1 large egg
- beaten
- ½ cup grated Parmesan cheese
- 2 tablespoons finely minced fresh parsley
- more for garnishing
- 1 tablespoon finely minced fresh basil
- more for garnishing
- ½ teaspoon garlic powder
- ½ teaspoon dried oregano
- ⅛ teaspoon coarsely ground black pepper
- 1 cup shredded mozzarella cheese
Instructions
- Preheat your oven to 375°F (190°C).
- Scoop out the insides of the zucchini halves, leaving a shell, and set aside.
- In a skillet over medium heat, cook the ground beef or turkey with the diced onion until browned.
- Season with salt, pepper, and minced garlic; cook for another 2 minutes.
- Stir in the marinara sauce and let simmer for 5 minutes.
- In a bowl, mix the ricotta cheese, beaten egg, Parmesan cheese, parsley, basil, garlic powder, and oregano.
- Fill each zucchini shell with the ricotta mixture, top with the meat sauce, and sprinkle with mozzarella cheese.
- Place in a baking dish and cover with foil.
- Bake for 30 minutes, removing the foil for the last 10 minutes to brown the cheese.
- Garnish with extra parsley and basil before serving.
Notes
For extra flavor, you can add your favorite vegetables to the meat mixture or use a different type of cheese as you prefer.
