Ingredients
Scale
- 30 oz zucchini
- 2.5 tsp coarse sea salt
- 0.4 oz garlic clove
- 2 large cloves
- 2 bulb green onions chopped
- 1 tbsp avocado oil
- 2–3 tsp toasted sesame oil
- 1 tbsp toasted white sesame seeds
Instructions
- Begin by slicing the zucchini into thin rounds or half-moons.
- Sprinkle the sliced zucchini with coarse sea salt and let it sit for about 20 minutes to draw out moisture.
- Rinse the zucchini well and pat dry with a clean towel.
- In a large skillet, heat the avocado oil over medium heat and add minced garlic cloves, sautéing until fragrant.
- Add the zucchini and chopped green onions to the skillet, stirring occasionally until the zucchini is tender, about 10-15 minutes.
- Drizzle with toasted sesame oil, tossing to coat well.
- Sprinkle toasted sesame seeds over the top and serve warm, garnished with additional green onions.
Notes
Adjust the amount of sesame oil to taste for more flavor. This dish pairs well with rice or as part of a larger Korean meal.
