Description

These Korean Zucchini Fritters are a delicious and crispy dish that brings a burst of flavor to your table. Perfect as a snack or appetizer!


Ingredients

  • 0.885 lb zucchini or 2 x 7-inch long zucchinis
  • 2 large eggs
  • 1 teaspoon salt
  • ½ teaspoon sesame oil toasted
  • ¼ cup potato starch or cornstarch for gluten-free
  • or all-purpose flour
  • 2 tablespoon vegetable oil or any neutral oil
  • Dipping Sauce: 2 tablespoon regular soy sauce or tamari sauce or coconut aminos for gluten-free
  • 2 tablespoon rice vinegar or white vinegar/apple cider vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon sesame seeds
  • ½ teaspoon gochugaru or red pepper flakes/sliced chilis

Instructions

  1. Grate the zucchini and place it in a bowl. Sprinkle with salt and let it sit for 10 minutes to draw out moisture.
  2. After 10 minutes, squeeze the grated zucchini to remove any excess water and return it to the bowl.
  3. Add the eggs, sesame oil, and potato starch (or flour) to the zucchini and mix until well combined.
  4. Heat vegetable oil in a frying pan over medium heat. Scoop spoonfuls of the mixture and flatten them slightly in the pan.
  5. Cook for 4-5 minutes on each side until golden brown and crispy. Remove from the pan and place on paper towels to drain excess oil.
  6. For the dipping sauce, combine soy sauce, vinegar, sesame oil, sesame seeds, and gochugaru in a small bowl and mix well.
  7. Serve the fritters warm with the dipping sauce.

Notes

For a gluten-free option, use cornstarch instead of all-purpose flour. Adjust the spiciness of the dipping sauce by adding more or less gochugaru.
