  • 2 lbs boneless skinless chicken thighs
  • 1/2 cup soy sauce
  • 3 tablespoons brown sugar
  • 1 tablespoon honey
  • 2 tablespoons gochujang
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 4 garlic cloves minced
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon toasted sesame seeds
  • 2 green onions thinly sliced

Instructions

  1. In a bowl, combine soy sauce, brown sugar, honey, gochujang, rice vinegar, sesame oil, minced garlic, and grated ginger to create the marinade.
  2. Add chicken thighs to the marinade, ensuring they are well coated. Cover and marinate in the refrigerator for at least 30 minutes, preferably a few hours.
  3. Preheat the oven to 400°F (200°C). Remove chicken from the marinade and place on a baking sheet lined with parchment paper.
  4. Bake the chicken for about 25-30 minutes or until fully cooked and caramelized, basting with the leftover marinade halfway through.
  5. While the chicken is baking, prepare the cabbage slaw by mixing sliced cabbage with sesame seeds and green onions in a bowl.
  6. Once the chicken is done, let it rest for a few minutes before slicing it into strips.
  7. Assemble the sandwich by placing the sliced chicken on a bun, topping it with cabbage slaw, and additional sesame seeds for garnish.
