- 1/2 cup soy sauce

- 1 teaspoon grated fresh ginger

Instructions
- In a bowl, combine soy sauce, brown sugar, honey, gochujang, rice vinegar, sesame oil, minced garlic, and grated ginger to create the marinade.
- Add chicken thighs to the marinade, ensuring they are well coated. Cover and marinate in the refrigerator for at least 30 minutes, preferably a few hours.
- Preheat the oven to 400°F (200°C). Remove chicken from the marinade and place on a baking sheet lined with parchment paper.
- Bake the chicken for about 25-30 minutes or until fully cooked and caramelized, basting with the leftover marinade halfway through.
- While the chicken is baking, prepare the cabbage slaw by mixing sliced cabbage with sesame seeds and green onions in a bowl.
- Once the chicken is done, let it rest for a few minutes before slicing it into strips.
- Assemble the sandwich by placing the sliced chicken on a bun, topping it with cabbage slaw, and additional sesame seeds for garnish.
