Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, cream together the salted butter and golden monkfruit until light and fluffy.
- Add the egg and vanilla extract (and maple extract if using), mixing well until combined.
- In another bowl, whisk together almond flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until a dough forms.
- Fold in the Lily’s white chocolate chips and chopped macadamia nuts.
- Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them apart.
- Optional: Sprinkle a pinch of sea salt on top of each cookie before baking.
- Bake for 12-15 minutes, or until the edges are golden brown.
- Remove from oven and allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For a richer flavor, consider adding maple extract. Store in an airtight container for up to one week.
