Ingredients

1/2 cup unsalted butter

3/4 cup powdered erythritol

1 large egg

2 tsp vanilla extract

1 1/3 cup almond flour

1/3 cup coconut flour

2 Tbsp protein powder

1 tsp baking powder

1/4 tsp salt

1/2 cup whipping cream

1/3 cup powdered erythritol

1 cup (8 ounces) full-fat cream cheese

1 tsp vanilla

2 drops pink food coloring


Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, beat together the cream cheese and unsalted butter until smooth and creamy.
  • Add the powdered erythritol, egg, and vanilla extract, mixing until well combined.
  • In a separate bowl, whisk together the almond flour, coconut flour, protein powder, baking powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  • Scoop tablespoon-sized balls of dough onto the prepared baking sheet, flattening them slightly.
  • Bake for 12-15 minutes until the edges are golden. Allow them to cool completely on a wire rack.
  • For the frosting, whip the whipping cream to soft peaks in a bowl. In a separate bowl, beat together the powdered erythritol, full-fat cream cheese, and vanilla until smooth. Fold the whipped cream into the cream cheese mixture.
  • Add pink food coloring to the frosting and mix until combined.
  • Spread the frosting over the cooled cookies and enjoy!

Notes

For a variation, you can add lemon or almond extract to the cookie dough for extra flavor. Store these cookies in an airtight container for up to a week.
