- 1/2 cup white sugar (100 grams)
- 1/4 cup freshly squeezed lemon juice (60 ml)
- Zest from 1 lemon
- 1 teaspoon vanilla extract
- 2 large eggs at room temperature
Instructions
- Preheat your oven to 325°F (160°C) and line a muffin tin with cupcake liners.
- In a small saucepan, combine blueberries, 1 tablespoon sugar, lemon juice, cornflour, and water. Cook over medium heat until the mixture thickens slightly, then remove from heat and let cool.
- In a mixing bowl, combine crushed graham crackers, 3 tablespoons sugar, and melted butter. Press the mixture into the bottom of each muffin liner to form the crust.
- In a large bowl, beat the cream cheese until smooth. Gradually add the 1/2 cup sugar, lemon juice, lemon zest, and vanilla extract, mixing well.
- Add the eggs one at a time, beating well after each addition until fully incorporated.
- Spoon the cheesecake mixture over the graham cracker crusts in the muffin tin.
- Bake for about 20-25 minutes or until the centers are set. Allow to cool completely before refrigerating for at least 2 hours.
- Once chilled, top each cheesecake with the blueberry sauce and serve.
