Ingredients
6 cups fresh peaches
peeled and sliced
1 cup granulated sugar (for peaches)
¼ cup water
1 tablespoon fresh lemon juice
½ cup unsalted butter
1½ cups all-purpose flour
1 cup granulated sugar (for batter)
2 teaspoons baking powder
½ teaspoon salt
1 cup whole milk
1 teaspoon pure vanilla extract
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
Instructions
- Preheat your oven to 350°F (175°C) and butter a 13×9-inch baking dish.
- In a large bowl, combine the peaches, 1 cup sugar, water, and lemon juice. Stir gently and set aside.
- In another bowl, melt the unsalted butter and set aside to cool slightly.
- In a separate mixing bowl, whisk together the flour, 1 cup sugar, baking powder, and salt.
- Add the melted butter, milk, vanilla extract, cinnamon, and nutmeg to the dry ingredients, and mix until just combined.
- Pour the batter into the prepared baking dish, then spoon the peach mixture over the top, spreading evenly.
- Bake in the preheated oven for 30-35 minutes, or until the cobbler is bubbly and the batter is golden brown.
- Allow to cool slightly before serving. Enjoy warm, preferably with a scoop of vanilla ice cream!
Notes
