Ingredients
6 cups fresh peaches
peeled and sliced
1 cup granulated sugar (for peaches)
¼ cup water
1 tablespoon fresh lemon juice
½ cup unsalted butter
1½ cups all-purpose flour
1 cup granulated sugar (for batter)
2 teaspoons baking powder
½ teaspoon salt
1 cup whole milk
1 teaspoon pure vanilla extract
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the sliced peaches with 1 cup of granulated sugar, water, and lemon juice. Stir to coat the peaches and let them sit for about 10 minutes.
- While the peaches are resting, melt the butter in a baking dish in the preheated oven.
- In another bowl, mix together the flour, 1 cup of sugar, baking powder, and salt. Gradually stir in the milk and vanilla extract until just combined.
- Pour the batter over the melted butter in the baking dish. Do not stir.
- Spoon the peach mixture over the batter, including the juice. Again, do not stir.
- Sprinkle with cinnamon and nutmeg to taste.
- Bake for 30-35 minutes or until the top is golden brown and the peaches are bubbly.
- Serve warm and enjoy!
Notes
For a twist, add a scoop of vanilla ice cream on top of the cobbler when serving. Ensure to use ripe peaches for the best flavor.
