For the Dip
- 8 oz (225 g) cream cheese, softened
- 1/2 cup sour cream
- 1 cup shredded sharp cheddar cheese
- 1/4 cup freshly grated Parmesan cheese
- 3–4 fresh jalapeños, finely diced, or 1/2 cup canned jalapeños, drained and diced
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 4 slices bacon, cooked and crumbled (optional)
- 1/4 teaspoon red chili flakes (optional)
For the Topping
- 1/2 cup Panko breadcrumbs
- 2 tablespoons unsalted butter, melted
- 2 tablespoons grated Parmesan cheese
- 1 tablespoon chopped fresh parsley

Instructions
- Preheat the oven to 375°F (190°C). Lightly grease a small baking dish.
- If using fresh jalapeños and you want a smoky flavor, roast them under a broiler or over an open flame until charred. Cool, peel, and finely dice. Alternatively, use fresh jalapeños raw for extra crunch. Remove the seeds and membranes for a milder dip.
- If using canned jalapeños, drain them thoroughly and dice.
- In a large bowl, beat the softened cream cheese and sour cream until smooth and creamy.
- Add the garlic powder, salt, and black pepper and mix well.
- Fold in the shredded cheddar, Parmesan, and diced jalapeños.
- Stir in the crumbled bacon and chili flakes if using.
- Spread the mixture evenly into the prepared baking dish.
- In a small bowl, combine the Panko breadcrumbs, melted butter, Parmesan, and chopped parsley.
- Sprinkle the breadcrumb mixture evenly over the top of the dip.
- Bake for 15–20 minutes, or until the dip is hot and bubbling and the topping is golden brown.
- Let the dip cool for about 5 minutes before serving.
- Serve warm with tortilla chips, crackers, baguette slices, celery, or other fresh vegetables.
Notes
- Control the heat: Remove the jalapeño seeds and membranes for a milder dip. Leave some or all of them intact for more heat.
- Fresh vs. canned: Fresh jalapeños provide brighter flavor and more texture, while canned jalapeños offer convenience and a slightly tangy flavor.
- For the creamiest dip: Use full-fat cream cheese and sour cream, and allow the cream cheese to soften before mixing.
- Use freshly grated cheese: Freshly grated cheddar and Parmesan generally melt more smoothly than pre-shredded cheese.
