  • 6 tablespoons caster sugar
  • 6 tablespoons Marsala

Instructions

  1. In a medium mixing bowl, whisk the egg yolks and caster sugar together until pale and creamy.
  2. Gradually add the Marsala wine, continuing to whisk until combined.
  3. Place the bowl over a pot of simmering water (double boiler setup) and whisk continuously for about 10-15 minutes, until the mixture is thick and frothy.
  4. Serve warm or chilled, optionally topped with fresh berries or a sprinkle of cocoa powder.

Notes

For best results, use a good quality Marsala wine. Adjust sugar to taste if you’d like a sweeter zabaglione.
