Ingredients

  • 1/2 lb ground beef (85% lean)
  • 1/2 lb ground pork
  • 1/2 cup fresh breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 large egg
  • lightly beaten
  • 2 cloves garlic
  • minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 1 cup diced yellow onion
  • 1 cup diced carrots
  • 1 cup diced celery
  • 2 cloves garlic
  • minced
  • 6 cups chicken broth
  • 2 cups beef broth
  • 1 tsp Italian seasoning
  • 1 bay leaf
  • 1/2 cup acini di pepe or orzo pasta
  • 4 cups baby spinach
  • roughly chopped
  • Salt and pepper to taste
  • Grated Parmesan for serving

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine ground beef, ground pork, breadcrumbs, Parmesan cheese, parsley, egg, minced garlic, salt, and pepper to form the meatballs.
  3. Shape the mixture into small meatballs, about 1 inch in diameter, and place them on the prepared baking sheet.
  4. Bake in the preheated oven for 20 minutes or until browned and cooked through.
  5. In a large pot, heat olive oil over medium heat, then sauté onion, carrots, celery, and garlic until softened, about 5-7 minutes.
  6. Add chicken broth, beef broth, Italian seasoning, and bay leaf to the pot; bring to a boil.
  7. Stir in the acini di pepe or orzo pasta and cook according to package instructions.
  8. Once the pasta is cooked, add the baby spinach and baked meatballs to the pot; simmer until spinach is wilted.
  9. Season with salt and pepper to taste before serving.
  10. Serve hot with grated Parmesan on top.

Notes

Feel free to add more vegetables or replace the acini di pepe with any pasta you prefer.
