- 1/2 lb ground beef (85% lean)
- 1/2 lb ground pork
- 1/2 cup fresh breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 large egg
- lightly beaten
- 2 cloves garlic

- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- 1 cup diced yellow onion
- 1 cup diced carrots
- 1 cup diced celery
- 2 cloves garlic
- minced
- 6 cups chicken broth
- 2 cups beef broth
- 1 tsp Italian seasoning
- 1 bay leaf
- 1/2 cup acini di pepe or orzo pasta
- 4 cups baby spinach
- roughly chopped
- Salt and pepper to taste
- Grated Parmesan for serving
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a bowl, combine ground beef, ground pork, breadcrumbs, Parmesan cheese, parsley, egg, minced garlic, salt, and pepper to form the meatballs.
- Shape the mixture into small meatballs, about 1 inch in diameter, and place them on the prepared baking sheet.
- Bake in the preheated oven for 20 minutes or until browned and cooked through.
- In a large pot, heat olive oil over medium heat, then sauté onion, carrots, celery, and garlic until softened, about 5-7 minutes.
- Add chicken broth, beef broth, Italian seasoning, and bay leaf to the pot; bring to a boil.
- Stir in the acini di pepe or orzo pasta and cook according to package instructions.
- Once the pasta is cooked, add the baby spinach and baked meatballs to the pot; simmer until spinach is wilted.
- Season with salt and pepper to taste before serving.
- Serve hot with grated Parmesan on top.
Notes
Feel free to add more vegetables or replace the acini di pepe with any pasta you prefer.
