Description
This Italian Seafood Salad combines tender octopus, succulent shrimp, and fresh squid, all poached to perfection and dressed with a zesty garlic-infused dressing, making it a perfect appetizer or light meal.
Ingredients
Octopus (1.5 lbs)
Shrimp (8 large)
Squid (4 tubes)
Celery (1 rib)
Bay leaves (2)
Lemon (2)
Tangerines (3)
Garlic (3 cloves)
Olive oil (¼ cup)
Honey Dijon mustard (2 tsp)
Fresh parsley (¼ cup)
Salt and pepper to taste
Instructions
- In a large pot, bring water to a boil and add bay leaves, celery, and a splash of wine (if using). Add the octopus and cook for about 30 minutes until tender.
- In a separate pot, bring water to a boil and briefly cook the shrimp and squid until just opaque, around 2-3 minutes for shrimp and 1-2 minutes for squid. Drain and set aside.
- For the dressing, mix olive oil, minced garlic, honey Dijon mustard, fresh lemon juice, and tangerine juice in a bowl, and season with salt and pepper.
- Combine the poached seafood, chopped parsley, and the dressing in a large bowl, gently tossing to coat all the ingredients.
- Chill the salad in the refrigerator for at least 10 minutes before serving for the flavors to meld.
Notes
For extra flavor, you can add capers or olives to the salad. Make sure not to overcook the seafood to ensure tenderness.
