Description
Italian Peach Summer Cookies are a delightful seasonal treat that combines juicy peaches with a soft, cake-like cookie base, perfect for summer gatherings and sweet cravings.
Ingredients
All-purpose flour
Baking powder
Salt
Unsalted butter
Granulated sugar
Large egg
Vanilla extract
Fresh peaches
Powdered sugar
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the all-purpose flour, baking powder, and salt; set aside.
- In another bowl, cream together the softened unsalted butter and granulated sugar until light and fluffy.
- Add the large egg and vanilla extract to the butter mixture, mixing until well combined.
- Gradually incorporate the dry ingredients into the wet mixture, stirring until just combined.
- Fold in the diced fresh peaches gently to avoid breaking them up too much.
- Drop spoonfuls of the cookie dough onto the prepared baking sheet, leaving some space between each.
- Bake in the preheated oven for 25-30 minutes, or until the cookies are lightly golden around the edges.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
- Once cooled, dust the cookies with powdered sugar for a sweet finishing touch.
Notes
For a healthier option, substitute granulated sugar with coconut sugar. If peaches are out of season, nectarines or apricots can be used as alternatives.
