1 cup sugar
2 large eggs

1 cup peach preserves
1 teaspoon cinnamon
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually mix the dry ingredients into the wet mixture until combined.
- Form small balls of dough and place them on the prepared baking sheet, leaving space between each.
- Make a small indentation in the center of each ball and fill it with a teaspoon of peach preserves mixed with cinnamon.
- Bake for 20-30 minutes or until the cookies are golden brown. Allow to cool on a wire rack.
