Description

These Italian Cream Bomb Cheesecake Bites are a delightful fusion of creamy cheesecake filling, a crunchy cookie crust, and topped with toasted coconut and chocolate chips.

  • 1 tsp vanilla extract
  • 1/4 cup (60ml) heavy whipping cream
  • 1/2 cup (50g) shredded coconut
  • 1/2 cup (75g) chopped pecans or walnuts
  • 1/4 cup (40g) mini chocolate chips (optional)
  • 1/2 cup (120ml) heavy whipping cream
  • 1/4 cup (30g) powdered sugar
  • 1/2 tsp vanilla extract
  • 1 1/2 cups (150g) graham cracker crumbs
  • 1/4 cup (50g) granulated sugar
  • 1/2 cup (115g) unsalted butter

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.
  3. Press the mixture into the bottom of a lined cupcake pan to form the cookie crust.
  4. In a separate bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth.
  5. Add heavy whipping cream, coconut, chopped nuts, and chocolate chips to the cream cheese mixture. Mix until combined.
  6. Spoon the cheesecake filling into the prepared crusts and smooth the top.
  7. Bake for 25 minutes, then let cool completely.
  8. To make the cream center, whip together heavy whipping cream, powdered sugar, and vanilla extract until soft peaks form.
  9. Once cheesecake bites are cooled, top each with a dollop of the whipped cream mixture.
  10. Garnish with toasted coconut and optional mini chocolate chips then refrigerate for at least 2 hours before serving.
