These Italian Cream Bomb Cheesecake Bites are a delightful fusion of creamy cheesecake filling, a crunchy cookie crust, and topped with toasted coconut and chocolate chips.

- 1 cup (120g) powdered sugar
- 1 tsp vanilla extract
- 1/4 cup (60ml) heavy whipping cream
- 1/2 cup (50g) shredded coconut
- 1/2 cup (75g) chopped pecans or walnuts
- 1/4 cup (40g) mini chocolate chips (optional)
- 1/2 cup (120ml) heavy whipping cream
- 1/4 cup (30g) powdered sugar
- 1/2 tsp vanilla extract
- 1 1/2 cups (150g) graham cracker crumbs
- 1/4 cup (50g) granulated sugar
- 1/2 cup (115g) unsalted butter

Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.
- Press the mixture into the bottom of a lined cupcake pan to form the cookie crust.
- In a separate bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth.
- Add heavy whipping cream, coconut, chopped nuts, and chocolate chips to the cream cheese mixture. Mix until combined.
- Spoon the cheesecake filling into the prepared crusts and smooth the top.
- Bake for 25 minutes, then let cool completely.
- To make the cream center, whip together heavy whipping cream, powdered sugar, and vanilla extract until soft peaks form.
- Once cheesecake bites are cooled, top each with a dollop of the whipped cream mixture.
- Garnish with toasted coconut and optional mini chocolate chips then refrigerate for at least 2 hours before serving.
Notes
For best results, allow the cheesecake bites to chill overnight to enhance the flavors.
