- 4 slices Italian bread
- 2 tablespoons pesto
- 1 chicken breast
- cooked and sliced in half lengthwise
- 2 tablespoons red onion
- slivered
- 1/4 cup roasted red peppers
- thinly sliced
- 4 ounces low moisture
- part skim mozzarella
- shredded or thinly sliced
- Cooking Spray
Instructions
- Preheat your panini press or grill.
- Spread pesto on one side of each slice of Italian bread.
- Layer the sliced chicken, red onion, roasted red peppers, and mozzarella evenly on two slices of bread.
- Top with the remaining slices of bread, pesto side down.
- Lightly spray the outside of the sandwiches with cooking spray.
- Grill in the panini press or on a stovetop grill for 5-7 minutes, until the bread is golden and the cheese is melted.
- Cut the paninis in half and serve warm.
