Ingredients

  • 4 slices Italian bread
  • 2 tablespoons pesto
  • 1 chicken breast
  • cooked and sliced in half lengthwise
  • 2 tablespoons red onion
  • slivered
  • 1/4 cup roasted red peppers
  • thinly sliced
  • 4 ounces low moisture
  • part skim mozzarella
  • shredded or thinly sliced
  • Cooking Spray

Instructions

  1. Preheat your panini press or grill.
  2. Spread pesto on one side of each slice of Italian bread.
  3. Layer the sliced chicken, red onion, roasted red peppers, and mozzarella evenly on two slices of bread.
  4. Top with the remaining slices of bread, pesto side down.
  5. Lightly spray the outside of the sandwiches with cooking spray.
  6. Grill in the panini press or on a stovetop grill for 5-7 minutes, until the bread is golden and the cheese is melted.
  7. Cut the paninis in half and serve warm.

Notes

For added flavor, consider marinating the chicken in Italian herbs before cooking.
