Description

These Huckleberry Crumb Bars feature a buttery crumb base topped with sweet and tangy huckleberries, making them a delightful dessert or snack.


Ingredients

  • 13/4 cups (225 grams) all-purpose flour
  • 1/8 teaspoon baking powder
  • 1/4 teaspoon kosher salt
  • 1/2 teaspoon ground cinnamon
  • 6 tablespoons (75 grams) granulated sugar
  • 1/4 cup (50 grams) light brown sugar
  • 12 tablespoons (169 grams) unsalted butter melted
  • 1 teaspoon pure vanilla extract
  • 2 cups (300 grams) huckleberries
  • 1 tablespoon cornstarch
  • 1/2 cup (100 grams) granulated sugar
  • 1/8 teaspoon kosher salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×8-inch baking dish.
  2. In a mixing bowl, combine the flour, baking powder, kosher salt, ground cinnamon, granulated sugar, and brown sugar.
  3. Stir in the melted butter and vanilla extract until crumbly.
  4. Press half of the crumb mixture into the bottom of the prepared baking dish.
  5. In another bowl, toss the huckleberries with cornstarch, granulated sugar, and kosher salt.
  6. Spread the huckleberry mixture over the crumb base.
  7. Sprinkle the remaining crumb mixture on top of the huckleberries.
  8. Bake for 30 minutes or until the top is golden brown.
  9. Allow to cool before slicing into bars.

Notes

You can substitute blueberries if huckleberries are unavailable. For extra flavor, add a splash of lemon juice to the huckleberry filling.
