- 1–3/4 cups (225 grams) all-purpose flour
- 1/8 teaspoon baking powder
- 1/4 teaspoon kosher salt
- 1/2 teaspoon ground cinnamon
- 6 tablespoons (75 grams) granulated sugar
- 1/4 cup (50 grams) light brown sugar
- 12 tablespoons (169 grams) unsalted butter melted
- 1 teaspoon pure vanilla extract
- 2 cups (300 grams) huckleberries
- 1 tablespoon cornstarch
- 1/2 cup (100 grams) granulated sugar
- 1/8 teaspoon kosher salt
Instructions
- Preheat the oven to 350°F (175°C) and grease an 8×8-inch baking dish.
- In a mixing bowl, combine the flour, baking powder, kosher salt, ground cinnamon, granulated sugar, and brown sugar.
- Stir in the melted butter and vanilla extract until crumbly.
- Press half of the crumb mixture into the bottom of the prepared baking dish.
- In another bowl, toss the huckleberries with cornstarch, granulated sugar, and kosher salt.
- Spread the huckleberry mixture over the crumb base.
- Sprinkle the remaining crumb mixture on top of the huckleberries.
- Bake for 30 minutes or until the top is golden brown.
- Allow to cool before slicing into bars.
Notes
You can substitute blueberries if huckleberries are unavailable. For extra flavor, add a splash of lemon juice to the huckleberry filling.
