Description

Delight in the creamy and tangy flavor of this Huckleberry Cheesecake Pie, perfectly balanced with a crunchy nut crust and fresh berries.


Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/2 cup chopped pecans

  • 6 Tablespoons cold butter
  • 1 (8 ounce) package cream cheese
  • softened
  • 1 cup whipped cream or whipped topping
  • 1/2 cup confectioners’ sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup granulated sugar
  • 4 1/2 teaspoons cornstarch
  • 1/8 teaspoon salt
  • 1/2 cup water
  • 2 cups fresh huckleberries or blueberries
  • (divided)
  • 1 1/2 teaspoons butter
  • Garnish with extra whipping cream and more berries if desired (but not needed)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the flour, brown sugar, and chopped nuts. Add the cold butter and mix until crumbly.
  3. Press the mixture into the bottom of a pie dish to form the crust. Bake for 10 minutes and let it cool.
  4. In another bowl, beat the softened cream cheese until smooth. Gradually add the confectioners’ sugar, granulated sugar, and vanilla extract. Mix well.
  5. Fold in the whipped cream until fully incorporated.
  6. In a saucepan, combine the cornstarch, salt, and water over medium heat. Stir in 1 cup of the huckleberries and cook until thickened.
  7. Remove from heat and fold in the remaining huckleberries.
  8. Spread the cream cheese mixture evenly over the cooled crust, then top with the huckleberry mixture.
  9. Refrigerate for at least 2 hours before serving. Garnish with extra whipped cream and berries if desired.

Notes

For best results, use fresh huckleberries when in season. You can substitute blueberries if huckleberries are unavailable. Adjust sweetness according to preference.
