- 1 cup plain/all-purpose flour
- 1/3 cup cocoa powder (unsweetened)
- 3/4 tsp baking powder
- 3/4 tsp baking soda
- 1 cup caster/superfine sugar
- 1/4 tsp salt
- 1 large egg
- 1/2 cup full-fat milk
- 75g unsalted butter (melted)
- 1 tbsp oil
- 1 tsp vanilla extract
- 1/2 cup boiling water
- 1 cup thickened cream
- 1 1/4 cups dark chocolate melts or chips
- Vanilla ice cream
Instructions
- Preheat your oven to 180°C (350°F) and grease a round cake pan.
- In a large mixing bowl, sift together the flour, cocoa powder, baking powder, baking soda, sugar, and salt.
- In another bowl, whisk the egg, milk, melted butter, oil, and vanilla extract until combined.
- Pour the wet ingredients into the dry ingredients and mix until smooth.
- Gradually add the boiling water and stir to combine; the batter will be thin.
- Pour the batter into the prepared cake pan and bake for 30 minutes or until a toothpick comes out clean.
- While the cake is cooling, prepare the chocolate fudge sauce by heating the cream until just simmering and then adding the dark chocolate. Stir until smooth.
- Once the cake is cooled, drizzle the chocolate fudge sauce over the top, and serve with vanilla ice cream.
