  • 3 cups broccoli florets
  • 2 cups bell peppers sliced
  • 1 medium red onion cut into wedges
  • 1.5 pounds baby potatoes halved
  • 2 tablespoons olive oil
  • 0.25 cup honey
  • 3 cloves garlic minced
  • 0.25 cup soy sauce or tamari for gluten-free
  • 1 tablespoon apple cider vinegar
  • 0.5 teaspoon salt or to taste
  • 0.25 teaspoon black pepper or to taste
  • 1 teaspoon smoked paprika
  • 1 teaspoon cornstarch optional
  • to thicken
  • 1 tablespoon water if using cornstarch

Instructions

  1. Preheat your oven to 400°F (200°C) and line a sheet pan with parchment paper.
  2. In a large bowl, combine the chicken, broccoli, bell peppers, red onion, and baby potatoes.
  3. In a separate bowl, whisk together the olive oil, honey, minced garlic, soy sauce, apple cider vinegar, salt, black pepper, and smoked paprika.
  4. Pour the sauce over the chicken and vegetables, mixing well to ensure everything is evenly coated.
  5. Spread the mixture evenly on the prepared sheet pan.
  6. If using cornstarch, mix it with water to create a slurry and drizzle it over the mixture before baking.
  7. Bake for 25-30 minutes or until the chicken is cooked through and the vegetables are tender, stirring halfway through.

Notes

Feel free to swap out the vegetables based on your preference. This dish can be made gluten-free by using tamari instead of soy sauce.
