Ingredients
2 tsp. sea salt
1 tsp. fresh cracked pepper
1 tsp. oregano
1 tsp. garlic powder
1/2 tsp. paprika
8 oz. pancetta
2 Tbsp. extra virgin olive oil
6 chicken thighs
1 large shallot
3 cloves garlic
1 cup chicken broth
1 stick of butter
1/2 cup honey
4 sprigs fresh thyme
2 large peaches
fresh basil and additional fresh thyme for topping
Instructions
- Preheat the oven to 375°F (190°C).
- In a small bowl, mix together 1 tsp. sea salt, 1/2 tsp. pepper, 1 tsp. oregano, garlic powder, and 1/2 tsp. paprika. Season the chicken thighs evenly with this mixture.
- In a large skillet, cook the pancetta over medium heat until crispy. Remove and set aside, leaving the drippings in the skillet.
- Add olive oil to the skillet and sear the seasoned chicken thighs for 5 minutes on each side until golden brown. Remove from skillet.
- In the same skillet, add the shallot and cook for 2 minutes until softened. Add the garlic and cook for another minute.
- Pour in the chicken broth and add the butter and honey. Stir until melted and combined.
- Return the chicken and pancetta to the skillet, then add the thyme sprigs and sliced peaches.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes until the chicken is cooked through.
- Serve hot, topped with fresh basil and additional thyme.
Notes
For a smokier flavor, consider using smoked paprika. You can substitute the peaches with other seasonal fruits like nectarines or apricots if desired.
