skinless chicken breasts

cut into 1-inch cubes

1/4 cup olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

1/4 teaspoon cayenne pepper (optional)

Salt and freshly ground black pepper to taste

1 cup Honey BBQ sauce

2 lbs Yukon Gold potatoes

scrubbed and cut into 1-inch cubes

2 tablespoons olive oil

1 teaspoon garlic powder

1/2 teaspoon dried rosemary

1/4 teaspoon dried thyme

Salt and freshly ground black pepper to taste

1/2 cup shredded cheddar cheese

1/4 cup chopped green onions

Sour cream or Greek yogurt

crispy fried onions


Instructions

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, combine the chicken cubes, 1/4 cup olive oil, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and black pepper. Toss to coat the chicken evenly.
  • Spread the chicken out on a baking sheet and bake for 15 minutes.
  • Meanwhile, in another bowl, mix the potatoes with olive oil, garlic powder, rosemary, thyme, salt, and black pepper.
  • After the chicken has baked for 15 minutes, add the potatoes to the same baking sheet. Drizzle the honey BBQ sauce over the chicken and potatoes.
  • Return to the oven and bake for an additional 15-20 minutes, or until the chicken is cooked through and the potatoes are tender.
  • Optional: Sprinkle cheddar cheese on top and return to the oven for 5 minutes to melt.
  • Garnish with green onions and serve with sour cream or Greek yogurt and crispy fried onions, if desired.
