with juice drained if canned)

Instructions

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt.
  • In another bowl, combine the milk, melted butter, eggs, and vanilla extract. Mix well.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the diced peaches.
  • Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  • In a small bowl, mix the brown sugar and ground cinnamon together, then sprinkle it generously over the muffin batter.
