Ingredients
2 cups all-purpose flour
1 cup granulated sugar
1 tablespoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 cup milk (dairy or dairy-free)
½ cup unsalted butter melted
2 large eggs
1 teaspoon vanilla extract
2 cups fresh or canned peaches (diced
with juice drained if canned)
1 teaspoon ground cinnamon (for topping)
½ cup brown sugar (for topping)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt.
- In another bowl, combine the milk, melted butter, eggs, and vanilla extract. Mix well.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the diced peaches.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- In a small bowl, mix the brown sugar and ground cinnamon together, then sprinkle it generously over the muffin batter.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For the best flavor, use ripe, fresh peaches when in season. Canned peaches can be used as a convenient alternative, but ensure they are well-drained.
