Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a bowl, whisk together the flour, baking powder, and salt; set aside.
- In a mixing bowl, cream the butter and sugar until fluffy. Add the eggs, one at a time, mixing well after each.
- Mix in the champagne, whole milk, vanilla extract, and peach puree until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Spoon the batter into the prepared cupcake liners, filling them about 2/3 full.
- Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean. Let cool completely.
- For the buttercream, beat the unsalted butter until creamy. Gradually add the powdered sugar, mixing until smooth.
- Add the peach puree, champagne, and a pinch of salt, mixing well to achieve desired consistency.
- Frost the cooled cupcakes generously with peach buttercream and garnish with fresh peach slices and optional toppings.
