This Homemade German Potato Soup is a rich and creamy blend of potatoes, vegetables, and spices, perfect for a comforting meal.
Ingredients

1 tbsp cooking oil
1 diced yellow onion
3 minced garlic cloves
2 celery stalks or 1/2 small celery root diced
2 medium carrots diced
2 lb peeled potatoes chopped
1/2 tsp dried marjoram
Pinch ground nutmeg
Salt and black pepper as needed
4 cups vegetable broth or water
2 whole bay leaves optional
1/3 cup non-dairy cream or coconut milk
Instructions
- In a large pot, heat the cooking oil over medium heat. Add the diced yellow onion and sauté until translucent.
- Add the minced garlic, diced celery, and carrots to the pot. Cook for an additional 5 minutes, stirring occasionally.
- Stir in the chopped potatoes, dried marjoram, ground nutmeg, salt, and black pepper.
- Pour in the vegetable broth or water and add the bay leaves if using. Bring to a boil, then reduce heat and let it simmer for 25 minutes or until the potatoes are soft.
- Remove the bay leaves and blend the soup until smooth using an immersion blender, or transfer to a regular blender in batches.
- Stir in the non-dairy cream or coconut milk and heat through. Adjust seasoning to taste before serving.
Notes
For extra flavor, consider adding fresh herbs like parsley or chives before serving.
