Ingredients

  • 8 ounces dried figs
  • 1 cup apple juice
  • 2 teaspoons lemon juice
  • 1 cup all-purpose flour
  • 1/4 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter
  • 1/2 cup light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. In a small saucepan, combine the dried figs and apple juice; bring to a simmer and cook for about 10 minutes until the figs are rehydrated.
  2. Remove from heat and stir in lemon juice. Allow to cool slightly before blending into a smooth filling.
  3. In a mixing bowl, whisk together all-purpose flour, whole wheat flour, baking powder, and salt.
  4. In another bowl, cream together the unsalted butter and light brown sugar until light and fluffy. Add the egg and vanilla extract, mixing until combined.
  5. Gradually add the flour mixture to the butter mixture, mixing until just combined.
  6. Divide the dough in half, flatten into rectangles, wrap in plastic, and chill for at least 30 minutes.
  7. Preheat the oven to 350°F (175°C). Roll out one piece of dough on a floured surface; place filling in the center, then fold the dough over and seal edges.
  8. Cut into bars and place on a baking sheet lined with parchment paper. Bake for 20-25 minutes until golden brown.
  9. Allow to cool before slicing and serving.

Notes

For a more intense flavor, you can add a pinch of cinnamon to the filling. Store in an airtight container for up to a week.
