Homemade Fig Newtons are a delightful treat that combines the natural sweetness of figs with a soft, chewy cookie dough. These homemade versions are healthier and packed with flavor.

- 8 ounces dried figs
- 1 cup apple juice
- 2 teaspoons lemon juice
- 1 cup all-purpose flour
- 1/4 cup whole wheat flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup unsalted butter
- 1/2 cup light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
Instructions
- In a small saucepan, combine the dried figs and apple juice; bring to a simmer and cook for about 10 minutes until the figs are rehydrated.
- Remove from heat and stir in lemon juice. Allow to cool slightly before blending into a smooth filling.
- In a mixing bowl, whisk together all-purpose flour, whole wheat flour, baking powder, and salt.
- In another bowl, cream together the unsalted butter and light brown sugar until light and fluffy. Add the egg and vanilla extract, mixing until combined.
- Gradually add the flour mixture to the butter mixture, mixing until just combined.
- Divide the dough in half, flatten into rectangles, wrap in plastic, and chill for at least 30 minutes.
- Preheat the oven to 350°F (175°C). Roll out one piece of dough on a floured surface; place filling in the center, then fold the dough over and seal edges.
- Cut into bars and place on a baking sheet lined with parchment paper. Bake for 20-25 minutes until golden brown.
- Allow to cool before slicing and serving.
Notes
For a more intense flavor, you can add a pinch of cinnamon to the filling. Store in an airtight container for up to a week.
