- 1 ½ pound boneless skinless chicken breasts
- 1 large onion chopped
- 3 carrots peeled and sliced into coins
- 2 celery stalks sliced
- 4 sprigs of fresh thyme
- 4 sprigs of fresh rosemary
- 3 garlic cloves minced
- 1 bay leaf
- Kosher salt
- Freshly ground black pepper
- 10 cups low sodium chicken broth
- 8 oz. egg noodles
Instructions
- Place the chicken breasts at the bottom of the crockpot.
- Add the chopped onion, sliced carrots, sliced celery, fresh thyme, fresh rosemary, minced garlic, bay leaf, salt, and pepper to the pot.
- Pour the low sodium chicken broth over the ingredients.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is cooked through.
- Once cooked, remove the chicken, shred it, and return it to the crockpot.
- Add the egg noodles and cook on high for an additional 20-30 minutes until the noodles are tender.
- Serve hot and enjoy your hearty chicken noodle soup!
Notes
For a richer flavor, consider adding a splash of lemon juice before serving. Store leftovers in an airtight container in the refrigerator for up to 3 days.
