Ingredients

  • 1 ½ pound boneless skinless chicken breasts
  • 1 large onion chopped
  • 3 carrots peeled and sliced into coins
  • 2 celery stalks sliced
  • 4 sprigs of fresh thyme
  • 4 sprigs of fresh rosemary
  • 3 garlic cloves minced
  • 1 bay leaf
  • Kosher salt
  • Freshly ground black pepper
  • 10 cups low sodium chicken broth
  • 8 oz. egg noodles

Instructions

  1. Place the chicken breasts at the bottom of the crockpot.
  2. Add the chopped onion, sliced carrots, sliced celery, fresh thyme, fresh rosemary, minced garlic, bay leaf, salt, and pepper to the pot.
  3. Pour the low sodium chicken broth over the ingredients.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is cooked through.
  5. Once cooked, remove the chicken, shred it, and return it to the crockpot.
  6. Add the egg noodles and cook on high for an additional 20-30 minutes until the noodles are tender.
  7. Serve hot and enjoy your hearty chicken noodle soup!

Notes

For a richer flavor, consider adding a splash of lemon juice before serving. Store leftovers in an airtight container in the refrigerator for up to 3 days.
