- 3/4 cup graham cracker crumbs
- 3 tbsp melted butter
- 1 cup cottage cheese
- 1/3 cup unsweetened plain Greek yogurt
- 2 tbsp cream cheese
- 2 tbsp sugar free maple syrup
- 1 egg
- 1/4 tsp baking powder
- 1 scoop PEScience Strawberry Cheesecake Protein Powder
- 3/4 cup frozen strawberries
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with papers.
- In a bowl, mix graham cracker crumbs and melted butter until well combined.
- Press the mixture into the bottom of each muffin cup to form the crust.
- In another bowl, blend cottage cheese, Greek yogurt, cream cheese, sugar free maple syrup, egg, baking powder, and protein powder until smooth.
- Pour the cheesecake filling over the crust in each muffin cup.
- Bake for 25-30 minutes or until the edges are set and the center is slightly wobbly.
- Let cool and chill in the refrigerator for at least 1 hour.
- Top with frozen strawberries before serving.
