- 3 tablespoons cornstarch
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine graham cracker crumbs and melted butter, then press this mixture into the bottom of a greased 9-inch springform pan.
- In a blender or food processor, blend cottage cheese until smooth.
- Add eggs, granulated sugar, vanilla extract, lemon zest, and cornstarch to the blended cottage cheese, and blend until well combined.
- Pour the cottage cheese mixture over the crust in the springform pan.
- Bake in the preheated oven for 30 minutes or until set.
- Allow the cheesecake to cool, then refrigerate for at least 4 hours before serving.
