These High Protein Chicken Enchiladas are a quick and delicious meal that can be made in just 30 minutes with only 7 ingredients. Perfect for busy weeknights or meal prepping.

- 1/2 cup refried beans (120g)
- 3/4 cup Greek yogurt (170g)
- 1 Tbsp taco seasoning
- 3 cups shredded chicken (280g)
- 1.5 cups shredded Mexican cheese (168g) divided
- 10 oz. can red enchilada sauce
- 8 flour tortillas 8-inch
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine the refried beans, Greek yogurt, and taco seasoning.
- Stir in the shredded chicken until well mixed.
- Spread a thin layer of red enchilada sauce on the bottom of a baking dish.
- Place a generous amount of the chicken mixture onto each tortilla, sprinkle with some cheese, then roll them up and place in the baking dish seam side down.
- Pour the remaining enchilada sauce over the top of the rolled tortillas, and sprinkle with the remaining cheese.
- Bake for 20 minutes or until the cheese is melted and bubbly.
