- 1 tbsp fresh thyme leaves or 1 tsp dried thyme if fresh is unavailable
- 2 tbsp extra-virgin olive oil
- 1 tbsp red wine vinegar
- 1 tsp lemon zest plus 1 tsp fresh lemon juice
- 1/2 tsp flaky sea salt plus more to taste
- 1/4 tsp freshly ground black pepper plus more to taste
- 1 oz crumbled feta cheese optional for serving
- 1 tsp toasted sesame seeds optional for garnish
Instructions
- In a large bowl, combine halved cherry tomatoes and sliced shallot.
- Add torn basil, chopped parsley, and thyme to the tomato mixture.
- In a small bowl, whisk together the olive oil, red wine vinegar, lemon zest, lemon juice, sea salt, and black pepper.
- Pour the dressing over the tomato salad and toss gently to coat.
- If desired, sprinkle with crumbled feta cheese and toasted sesame seeds before serving.
Notes
For a spicier kick, consider adding a pinch of red pepper flakes. This salad is best served fresh but can be refrigerated for a few hours.
