  • 1 tbsp fresh thyme leaves or 1 tsp dried thyme if fresh is unavailable
  • 2 tbsp extra-virgin olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp lemon zest plus 1 tsp fresh lemon juice
  • 1/2 tsp flaky sea salt plus more to taste
  • 1/4 tsp freshly ground black pepper plus more to taste
  • 1 oz crumbled feta cheese optional for serving
  • 1 tsp toasted sesame seeds optional for garnish

Instructions

  1. In a large bowl, combine halved cherry tomatoes and sliced shallot.
  2. Add torn basil, chopped parsley, and thyme to the tomato mixture.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, lemon zest, lemon juice, sea salt, and black pepper.
  4. Pour the dressing over the tomato salad and toss gently to coat.
  5. If desired, sprinkle with crumbled feta cheese and toasted sesame seeds before serving.

Notes
