- 1 lb ground beef
- 1 cup long-grain white rice
- 1 can (14.5 oz) diced tomatoes

- 2 cups beef broth
- 1 cup shredded cheddar cheese
- 1 tsp dried oregano
- 1 tsp paprika
- Salt and pepper

- 2 tbsp olive oil
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat the olive oil over medium heat and add the chopped onion and minced garlic. Sauté until they are soft and fragrant.
- Add the ground beef to the skillet. Cook until browned, breaking it up with a spoon as it cooks.
- Stir in the diced tomatoes (with juice), beef broth, rice, oregano, paprika, salt, and pepper. Bring the mixture to a simmer.
- Transfer the mixture into a 9×13 inch casserole dish. Cover tightly with foil.
- Bake in the preheated oven for 30 minutes.
- Remove the foil, sprinkle the shredded cheddar cheese on top, and bake for an additional 5-10 minutes, until the cheese is melted and bubbly.
- Remove from oven, let it cool slightly, then serve warm.
