  • Small Pasta Shapes (¾ cup / 75g)
  • Parmesan Cheese (½ cup / 50g
  • freshly grated)
  • Garlic Cloves (3-4
  • minced)
  • Onion (1 medium
  • finely chopped)
  • Italian Seasoning (1 tbsp)
  • Red Pepper Flakes (optional
  • ¼ tsp)
  • Salt and Freshly Ground Black Pepper (to taste)
  • Olive Oil (2 tbsp)
  • Fresh Basil Leaves (a handful
  • chopped)
  • Fresh Mozzarella (optional
  • torn into small pieces)

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until fragrant and translucent, about 5 minutes.
  2. Transfer the sautéed onion and garlic to a crockpot. Add boneless chicken, crushed tomatoes, chicken broth, Italian seasoning, red pepper flakes (if using), salt, and pepper.
  3. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and easily shredded.
  4. Remove the chicken, shred it with two forks, and return it to the crockpot. Stir in small pasta shapes and cook on high for an additional 30 minutes, or until the pasta is tender.
  5. Stir in grated Parmesan cheese and chopped basil just before serving. For a cheesy finish, add torn mozzarella pieces on top.
