Description
This Heart Healthy Chicken Casserole is a wholesome and delicious dish that combines tender chicken, fresh vegetables, and a creamy sauce, topped with a crispy corn flake crust, making it perfect for a family dinner.
Ingredients
Non-stick cooking spray
1 Tbsp olive oil
1 medium green bell pepper
1 medium yellow onion
2 medium celery stalks
4 large garlic cloves
4 cups cooked
shredded boneless
skinless chicken breast
1 can (10.5 oz) unsalted cream of mushroom soup
8 oz reduced fat sour cream
1/4 cup water
1 tsp freshly ground black pepper
1 cup roughly crushed gluten-free corn flakes
1/2 Tbsp paprika
2 Tbsp chopped fresh chives or parsley
Instructions
- Preheat your oven to 350°F (175°C) and lightly spray a baking dish with non-stick cooking spray.
- In a large skillet, heat 1/2 tablespoon of olive oil over medium heat, then add the diced green bell pepper, yellow onion, and celery. Sauté until softened, about 5 minutes. Add minced garlic and cook for an additional minute.
- In a large bowl, combine cooked chicken, sautéed vegetables, cream of mushroom soup, reduced fat sour cream, water, and 1/2 teaspoon of black pepper. Mix well until combined.
- Transfer the chicken mixture into the prepared baking dish and spread it out evenly.
- In a small bowl, mix the crushed corn flakes, paprika, and remaining 1/2 teaspoon of black pepper with the remaining 1/2 tablespoon of olive oil. Sprinkle this mixture evenly over the chicken casserole.
- Bake in the preheated oven for 30 minutes, or until the casserole is bubbly and the top is golden brown.
- Remove from the oven and let cool for a few minutes before serving. Garnish with fresh chives or parsley if desired.
Notes
For an extra flavor boost, you can add your favorite herbs or spices. Serve with a side salad for a complete meal.
