These Healthy Pear Oatmeal Crumb Bars are a delightful balance of flavors and textures, featuring a buttery shortbread crust, sweet pear filling, and a crunchy oat topping.

- ½ cup coconut oil or butter
- melted
- 1 1/3 cups gluten-free all-purpose flour
- 1 cup gluten-free rolled oats
- ¼ cup pure maple syrup
- Pinch sea salt
- 3 large ripe bosc pears
- sliced
- ¼ cup water
- 2 Tbsp pure maple syrup
- ½ tsp ground cinnamon
- Pinch ground nutmeg

- 1 Tbsp gluten-free all-purpose flour
- Pinch sea salt
- 1 cup powdered sugar
- 2 Tbsp water or lemon juice
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8-inch square baking dish.
- In a mixing bowl, combine melted coconut oil or butter, gluten-free flour, rolled oats, maple syrup, and sea salt to form the crust and topping mixture.
- Press half of the mixture into the bottom of the prepared baking dish to create the base.
- In a saucepan, combine sliced pears, water, maple syrup, ground cinnamon, nutmeg, gluten-free flour, and sea salt. Cook over medium heat until the pears are tender.
- Spread the pear filling evenly over the crust in the baking dish.
- Sprinkle the remaining crumb mixture on top of the pear filling.
- Bake for 30 minutes or until the top is golden brown.
- Allow to cool before slicing into bars. Optionally, whisk together powdered sugar and water or lemon juice to create a glaze, then drizzle over the bars before serving.
Notes
Make sure the pears are ripe for the best flavor. Substitute regular flour if gluten-free is not required.
