Description

These Healthy Peach Oatmeal Breakfast Cookies are a delicious, nutritious way to start your day. Packed with oats and fresh peaches, they’re perfect for a quick breakfast or snack.


Ingredients

  • 1 cup (100g) instant oats (gluten-free if necessary and measured like this)
  • Âľ cup (90g) whole wheat or gluten-free* flour (measured like this)
  • 1 ½ tsp ground cinnamon
  • ÂĽ tsp ground nutmeg
  • 1 tsp baking powder
  • ÂĽ tsp salt
  • 1 tbsp (28g) coconut oil or unsalted butter
  • melted and cooled slightly
  • 1 large egg
  • room temperature
  • 1 tsp almond extract (see Notes!)
  • ÂĽ cup (60mL) pure maple syrup
  • room temperature
  • 6 tbsp (90mL) unsweetened vanilla almond milk
  • room temperature
  • ½ cup (100g) diced peaches (see Notes!)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine the instant oats, whole wheat flour, cinnamon, nutmeg, baking powder, and salt.
  3. In another bowl, whisk together the melted coconut oil or butter, egg, almond extract, maple syrup, and almond milk.
  4. Mix the wet ingredients into the dry ingredients until just combined, then fold in the diced peaches.
  5. Drop tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 15-20 minutes or until the cookies are lightly golden on the edges.
  7. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For added sweetness, feel free to adjust the amount of maple syrup. Also, you can use fresh or frozen diced peaches depending on the season.
